Chef BackgroundWith over 14 years of experience in professional kitchens, Louie has worked across bistros, gastronomy, and Michelin-starred environments, developing a strong technical foundation alongside a curious, exploratory approach to cooking. An EHL alumnus, he has recently focused on private dining and chef-led pop-ups, creating spaces for creative freedom and direct engagement with guests.His cuisine blends classical French technique with Asian flavours, resulting in dishes that feel familiar yet thoughtfully unexpected. Guided by balance and precision rather than shock or excess, Louie’s cooking emphasizes harmony, clarity, and generosity. For a limited time, Maison Lou takes over the kitchen at Amia Restaurant in Zurich, presenting a pop-up menu inspired by modern Asian flavours and grounded in French technique.The menu is built around sharing dishes, seasonal produce, and daily market finds. Expect familiar French foundations reworked with Asian ingredients, light touches of fermentation, acidity, and spice — always balanced, never forced.Some dishes are available in limited quantities, the menu evolves regularly, and the experience is designed to be relaxed, interactive, and generous. This is food meant to be explored together, paired with good drinks, and enjoyed without formality.
